Greetings from sunny Honolulu, where I'll be for the next three weeks!
Bunny missed her last day of preschool before vacation, the day her class was going to make latkes. So, being the good mom that I am, we made some together once we arrived at my mom's house.
But, being that this is Hawaii and that we're Korean (or at least partially) we also fried up some kimchi pancakes and fish jun. It's about the oil, right?
LATKES (I winged it)
- 2 pounds baby (new) yukon gold potatoes, grated and squeezed
- 1 small onion, grated
- a little flour to bind (about a teaspoon)
- salt and pepper
Form into patties and fry in olive oil.
