20 minute meal: Japanese Yellow Curry

Curry and rice is nice...and would be even better with a side of kimchi.

Japanese yellow curry is one of those comfort foods that reminds me of my childhood. A steaming-hot bowl of curry and rice just hits the spot sometimes. Thankfully, it's easy to make using boxed curry which contain bricks of curry paste. I like S&B or Vermont brands, available at any Japanese store and some well-stocked supermarkets in the Asian section.

Just add water, protein (chicken, beef, shrimp, tofu) and veggies + the curry mix and you are done. This curry is also wonderful atop udon (with or without broth) or even over spaghetti (a Hawaii thing.)

Put on a pot of rice, and by the time that's done, so is the curry. Just follow the directions on the box.

Mmmm... Haven't made this in a while! Gotta stock up, once this frickin' heat is over down here and it's stew weather finally. :)

This is one of my favorite meals. It tastes great and it is super simple. It also makes a lot so you have leftovers to bring to work for lunch.

omg, when i first met my bf he was at ucla and working and young, haha and used to eat this everyday. but me being the major honky and he being all indo i had never had it..yum! i haven't had it in 10 yrs i think we used to buy the s$b. when its cold i am going to give it a try again.

I LOVE curry. We eat this every couple of weeks - YUM! We've never had it on udon. Great idea!

When I lived in Japan, we always used to laugh at Vermont-brand curry. Because Vermont is so well know for its .... curry? :-) It definitely taste good and is super-simple to make, though! Happy comfort food, and kids like it.

Ah, the Korean pantry staple. I have about 10 boxes of this. It was on sale :)
