Rustic vegetarian pizzas with whole wheat crust
Everyone knows I'm the only (half) Italian in the world that doesn't like pizza, but I suppose I should clarify: I like my pizza. I like a very simple pizza with a thin crust, minimally topped, and minus the overpowering tangy tomato sauce and heavy cheese.
This was dinner for family movie night a couple of week's ago. I cleaned out the fridge of veggies and cheeses, bought two bags of whole wheat pizza dough, and went to town. All the ingredients were locally sourced except for the olives (Greece), pecorino cheese (Italy), and the potatoes (not sure of source).
Before making pizza in your home oven, preheat it at 500º for at least half an hour, preferably an hour. You want it as hot as possible. Bake for 10-12 minutes until done.
The toppings included locally-grown broccoli, onions, disks of creamy Sonoma goat cheese, spiced roasted local cauliflower, kalamata olives, boiled fingerling potatoes, and Napa Valley olive oil.
The first pizza came together as broccoli, onion, and goat cheese:
Baked, it looked like this--not much different, just enough for the crust to crisp and broccoli to lightly brown:
The second pizza was cooked potato, roasted cauliflower, pecorino, and olive:
I like a little heat on my pizza. Instead of "pizza flakes," I prefer to crumble these whole hot Tuscan peppers over my pizza (or pasta). Yowza! They are fiery!
Bunny preferred the broccoli pizza while Wallie dug the cauliflower and olive. Bunny liked picking the potatoes and cauliflower off the second pizza but she really really doesn't like olives. Too bad for her.








did you steam/blanche the potatoes before putting them on the pizza?

i really dislike pizza but chalk it up to my asian lactose intolerance! it is very convenient that julian is allergic to all dairy so we can order thin crust, cheeseless pizzas from the local italian restaurants. not dealing with the negotiations of the regular pizza joints is such a relief. a wood burning pizza place is opening up around the corner which will be very convenient.
