Meal Planning Monday
First, my farmer's market purchases for the week:
- 2 more bunches of asparagus because I cannot get enough. We've been eating it almost every day.
- 3 onions
- 1 celeriac or celery root
- 2 bunches of broccoli
- 10 lb. bag of oranges
- 4 fuji apples
- 1 bunch of celery
- 1 bunch of carrots
- 6 avocados (because they were cheap)
- eggs
- whole grain wheat bread (addicted to it)
For my menu this week, the [*] indicates locally grown or sourced items.
- Mexican Monday: It's all about Caldo de Pollo with my sis tonight. I started a big batch of chicken* broth yesterday, and to that we'll add big hunks of chicken, some halved corn cobs, and maybe a handful or two of rice*. We serve it in big bowls and top each serving with chopped tomatoes*, diced onions*, diced avocado*, cilantro leaves*, sliced jalapeños*, and a hefty squeeze of lime* (from my yard). I'll take pics.
- Tuesday: Kotlet-e-Gusht from commenter Karen (Thanks, Karen!! Karen sent me her recipe, but I Googled a similar one which I linked. You have to scroll down a bit, but it's there.) Celeriac* remoulade.
- Wednesday Sandwich night: Whole grain bread topped with broccoli* frittata* wedges. Asparagus* salad. Potato* salad with lots of fresh dill*.
- Thursday: My brother arrives. Not sure yet.
- Friday: Not sure yet.
- Saturday: Dinner out: steaks and martinis.
- Sunday: Probably something simple, like a big salad. Depends on the farmer's market!

We're gone for two nights this week, so meal planning is a bit easier. Here's what we have planned.

I am excited you are going to try the kotlet. I hope your family enjoys them as much as mine. You have given me so many great recipe ideas, I am pleased to offer something in return.
it's Mexican Monday here too - we are having chimichangas
Tues - spaghetti with browned butter & mizithra cheese, Farmer's Market veggies
Weds - lemon & garlic chicken with kale & beans (via the Expatriate's Kitchen)
Thurs - fried gnocchi (via 101 Cookbooks) with asparagus, edamame, garlic & parmasean
Fri - veggie tempura, yaki-soba & maybe some teriyaki chicken on the grill
Sat - sabzi ghormeh (Persian beef & herb stew) with basmati
Sun - chicken shoyu with Farmer's Market veggies
Mon - St Patty's Day with CityMama's corned beef & cabbage

I don't have a plan this week. And am already stressed. We didn't make it to the Farmer's Market on Sunday and we do not have a fresh vegetable or fruit in the house! ahhhh
I think tonight we'll be having breakfast for dinner (eggs, toast, yogurt, and ham).
After D has gone to bed tonight, I'll be making a mad dash to the store for something a little better for Tuesday. Thank goodness there is another FM on Wednesday that is on my way home from work so I should be able to put something better together.
And I totally feel you on the asparagus. It is my fave! We've been having it at least once a week.

Not sure what I'm cooking but thank you to the end of the earth for the artichoke tutorial. I could eat those every day but never had a clue how to cook them. Picked some up at the farmer's market this weekend and as soon as my little man gets over his strep throat and quits hanging on me I plan on making cooking those up and sitting down with a glass of wine!

I'm with Caitlin. These Chicago winters are horrible. That being said, here's our meal plan for the week. Nothing terribly inspirational. But the family is getting fed and that's gotta count for something!
Monday - baked whole wheat pasta with veggies, mozz, tomatoes, etc.
Tuesday - Tomato & lentil stew with a side of green beans and biscuits
Wednesday - Taco Skillet Pie
Thursday - leftovers
Friday - Chicken/Pineapple/Ginger/Veggie Stir-fry over whole wheat spaghetti
Saturday - out for dinner!
Sunday - not sure yet

My SO made up the meal plan for this week.
Monday - baked cut up chicken (bread crumbs / egg / spices), assorted baked veggies (carrots, beets, broccoli and potatos) and tater tots
Tuesday - Calamari (not sure how I'll prepare it yet - my daughter picked it out), chicken & veggie stir fry with simmer sauce plus rice
Wednesday - Pasta fajole and salad
Thursday - Either franks and beans and rice (http://www.liquididea.com/2007/05/wills_indian_style_franks_and.html) or some kind of take out.
Friday - Hot Lips Pizza (http://www.hotlipspizza.com/pizza/dailyspecials.html) (note the Friday veggie special - my favorite!) and salad
Saturday - White bean, sausage and tomato soup (super easy) plus gnocci (mostly for kids) and salad and bread
