Chocolate-Coconut (You'll never guess it's vegan) Ice Cream

It was so good.
Soooooo good.
I make this last night for our dinner guests, two of whom have serious dairy allergies. I had never attempted vegan ice cream before and it was an experiment gone terribly and terrifically right. If you have an ice cream maker, you must make this immediately if not sooner. I think I am going to start basing all my ice cream off of coconut milk. It's much creamier than cow's milk and I like the flavor better, especially with chocolate.

CHOCOLATE-COCONUT VEGAN ICE CREAM
I use a Cuisinart ice cream maker for this.
- 2 cans of Chaokoh coconut milk (My pref. It's the brand I grew up with), chilled in fridge for at least 2 hours
- 2 tbsps of sugar
- 1/2 cup unsweetened cocoa powder (I used Ghirardelli)
- 1 cup of flaked coconut
Combine first three ingredients in a mixing bowl until well-combined. Dump into frozen bowl of ice cream maker and turn on. Process for 25 minutes or until set, add in coconut then process a few minutes more until blended. Transfer to another container and freeze for about 30 minutes to set before serving. Sheer heaven.

I know this is crazy, but my husband HATES the texture of coconut...flavor is ok. Can you "feel" the coconut when you eat it? I am lactose intolerant and pregnant and this sounds so gooood. I could just make it for myself...

I just discovered home-made vegan ice cream, too. Veganomicon has a fabulous chocolate that tastes less coconutty but still uses some coconut milk; everyone in my family (one vegan, three omnivores) thought it was just as good as "real" ice cream--and so much quicker and easier!

Love it! My favorite ice cream/gelato flavor is Nutella & coconut. I'll experiment with the Nutella and possibly post on my blog next week.

alright city mama, I have been making coconut milk based ice cream for some time now, because I love coconut milk and I love to make ice cream and seems the two would work out beautifully together. I was especiall excited to make a curried roastd coconut hocolate ice cream - amazing flavor, but it kept coming out grainy as though he coconut oils solidified into lots of little grains in the fozen cuisinart bowl. kept melting it all backdown and trying to process it smooth, but no luck - SO, can anyone tell me how to keep it creamy?

We made this yesterday and my husband passes on this question, "I made this on Sunday. I love super dark, bittersweet chocolate, and I liked this. But are you sure that the correct amount is just 2 tablespoons of sugar? I mixed the ingredients, tasted the mixture, and immediately added another 2 tablespoons of sugar. Even at that level, there was no detectable sweetness. The kids that tasted it didn't like it. If I tried it again, I would do 8 tablespoons of sugar, or I might try sweetened cococa, like the kind used for making hot chocolate, instead of unsweetened cocoa."
