Homemade Banana Ice Cream
Because it's been so hot, it's been perfect ice cream-making weather. I have a Cuisinart automatic ice cream maker so it makes making ice cream, frozen yogurt, and sorbets easy. The only thing I wish it had was an extra bowl so I could make two flavors at a time, but that is on my list to buy once summer gets into full swing.
Last night, while dinner was cooking, Bunny and I made banana ice cream. She helped mainly by licking spoons. This isn't a custard-based ice cream (which, texture-wise, I prefer), but it's nice because it's so easy to make. No need to make the custard and wait for it to cool. This week we'll make a frozen custard (one of Nigella's, maybe raspberry?) and I will be sure to post about it.
BANANA ICE CREAM
2 cups very cold heavy cream
1 cup very cold whole milk (or coconut milk would be great, too)
2 tbsp sugar
2 roughly chopped, slightly over-ripe bananas (pref. frozen)
Combine cream, milk, and sugar in a mixing bowl. Whisk together then pour into the frozen bowl of ice cream maker. Turn on and let it run for about 20 minutes until ice cream starts to set up. Then add bananas, run 5 minutes more. Scrape out into another container and freezer for about 2 hrs until ice-cream is set.
Next time I'm going to try making it with all coconut milk to try my hand at a "vegan" dessert.












I LOVE banana ice cream. When I was pregnant with the twins I ate a lot of "Chunky Monkey" (hey man, I was eating for three!). I don't like most banana ice cream because it tastes fake. I never thought of making in myself. I love the idea and I love the idea of making it with coconut milk. We have one of the soccer ball ice cream makers where you kick the ball around until you make the ice cream. It has been really hot here so now it is on my list of something to try. I will let you know how it goes with just coconut milk as we are generally dairy free here.

I should have known Nigella has good ice cream recipes! I could stand to branch out this summer from my burnt sugar rut.

We made Key Lime ice cream and chocolate ice cream this weekend, and I was JUST going online to search for banana ice cream recipes. That is freaky that you posted this-good thing I checked my feeder!

Why people don't use more bananas in their ice cream is a shame!
BTW, I made one with cocnut milk too, although it wasn't vegan. I added cream and eggs because I also prefer the texture of custard ice creams. Anyways, coconut + bananas = yummy!

Wow. You are like a super mom- my kids are lucky if I break out the George Foreman grill! I should get an ice cream maker for vegan ice cream.

Just got a Cuisinart ice cream maker for birthday and did the inaugural recipe Sunday. I did a strawberry balsamic ice cream. It is positively SCARY how easy it is in that machine. This banana ice cream sounds divine!

yum! I just made a banana vegan ice cream with chocolate chunks and a peanut butter swirl. The swirl wasn't too professional, more like globs, but darn delicious.
there are some great vegan recipes in this months vegetarian times which I think you can read online.

When I was dairy free for the kiddo I got coconut milk ice cream at Maggie Mudd's in the city -- soooo good.
